There should be at least grappling. Back in the days when people fought with plate armor, they didn't always cut off eachothers heads they usually grappled eachother and tried to fit a dagger through whatever weak point in the enemy's armor that showed itself. You should be able to lock an opponent's blade with the hilt of your sword and use the sharp end of your shield to stab the enemy. Shield bashing is a must, and shield advancing should be able to be used to back an weaker enemy into a corner and kill him.

It'd be nice, but has grappling *ever* been pulled off well in a first person perspective? No, quick scripted manuevers don't count.
