Problem is, most legendaries are not allowed in most competitive play (PWT, Battle Subway, VGC, etc...). You do have to EV train to a degree to be successful in those.

Besides, it's getting easier and easier to EV train. This gen you could almost completely EV train using nothing but the Vitamins and Wings (vitamins first of course). In the 6th gen, you can use the training mini game to EV train, so it's even easier (to do and to keep track of). There is really no excuse to not do it (outside of not being interested in it).

Additionally, you are technically using math to play the game regardless (you are just not that focused on it), so that point is kind of mute.

And not all those that EV train know how to utilize it well. You may have beaten many that have EV trained (because it's not impossible to do), but I doubt you could beat the "pros" without at least some EV training.
