My NAT type is strict using wifi. So I tried it with my ethernet cable. But my xbox doesn't pick up that I have an ethernet cable plugged into my xbox and modem.

Any ideas?

Did your try resetting your modem?

Being wired or wireless has nothing to do with your NAT.

The NAT settings are determined by your router. So to avoid these settings you can connect your xbox directly to your modem.

Yes. A couple times.

And when I plug in my cable to my xbox and modem, I can't connect to live because my xbox doesn't recognize its in.

plug your modem directly into your xbox.
then reset the modem.
then turn on the xbox
