I say something like...

Human
Normal/Fighting type
No idea on the ability...

HP: 55
Attack: 45
Defense: 40
Special Attack: 30
Special Defense: 35
Speed: 45

BST: 250

Meaning the average human would give the average Bidoof a good fight, for instance.

Different humans would have different stats of course. Usain Bolt has a 31 IV and max EVs in speed for example. Mike Tyson has a 31 IV and max EVs in attack. If Special Attack can be taken to represent intelligence, Einstein would have a 31 IV and max EVs in that, etc.

Considering how much humans rely on their pokemon? I don't think they even can beat a bidoof.

It is, but obviously we don't have that so I was trying to think of something else.
