I am trying to finish up my soon-to-be Azumarill and I have 4 EVs left to put somewhere, so I wanted to know would that extra point be better for Defense or Special Defense? (Currently 252 HP, 252 Attack for my EVs).
Proud to like ALL of the new starter evolutions, and plans on using all three on my in game team.

Dragons are whatever the hell they want to be, that's why they're dragons. Put it in health.

I'd say Dragons are more attack based.

There are more physical-oriented Dragon-types, but there are Dragon-types that hit hard with special attacks as well.

Only dragons that are typically special based are Kingdra Lati@s, and Hydregion (and maybe Goodra?)

Put it in speed.

This.

A point in a defensive stat is rarely going to change the outcome of a matchup. A point in speed could change the entire thing.
