Considering the fact he's so old, there's not really much point of him constantly catching and training Pokemon. They'd die over the years while he'd live on, and that would get pretty depressing after a while. He also only really seems to care for his special Pokemon, which is probably why his other Pokemon aren't all that great.
His pokemon are likely to be 3,000 years old because they were carefully chosen as ones that could live that long. Golurk, a ghost; sigilyph, an ancient pottery thing; and Torkoal (tortoises do not die of old age).
