Testing computer when testing out new video cards?

I was under the impression that the i5 3570k was the standard processor to test out the latest video cards.

why use the inferior i5 3570 when you can use the better 3770k?

Because they don't want any possibility of the CPU limiting the GPU. Though I see even higher-up CPUs than the 3770K used in many reviews.
