A 1080p screen and another 4 gigs of RAM should be prioritized.

"Beefy" meaning what in a $$ amount?

I'm not American, so I might be off, but I'd say at least $250-300+, based on this:

I'd go for 8 GB of RAM first. Not a big cost, either.

Hmm. Okay, and does anyone have any recommendations or price points for a monitor that would make good use of a video card of that caliber?

Trying to decide how much I want to spoil myself here.

This is on the agenda as well. I feel like I should probably decide on the monitor first though, as otherwise even the GPU I currently have isn't really being used to potential.

If you want 1440p at 60 fps with decent settings the minimum you'll want is a 290/780. If you're alright with sub 60 or low a 770/680 or 280x/7970 should be passable. 1080p is twice as demanding as 720p and 1440p is twice as demanding as 1080p (and 2160/4k is twice as demanding as 1440p) and there are games that the 780/290 won't max at 1080 so keep that in mind when making your purchases.
Every time I try to go where I really wanna be it's already where I am, 'cuz I'm already there
