For the second build, spend 100 more, and get you a 780.

Is it really worth it? And where can you you find a 780 for 480$?

I'm really trying to keep it to 1600 here

Looks more like a semi-enthusiast build than budget build to me. For second build, I don't think you need UD5H, UD3H motherboard is fine (well, are you planning for triple SLI?), use the extra money to upgrade the GPU to 780.

I've updated it to a cheaper motherboard. Anything else I could cut down on guys? I don't want the tower to be too tight.. that's rather important. But is at 75$ CPU Sink necessary?

IF we could get this to $1400 I'd love you all forever. I want this thing to be strong at $1400 WITH a monitor. The CPU and GPU should not be lacking.
