I recently ordered one for a course I'm going to do (no mac vs windows vs hackintosh debates please) and I'm wondering what recommended apps should I look at?

So far on my list I have to look at:
Windows 8.1 (getting it for free)
Office for Mac (discounted)
gimp
vlc
libreoffice (I always install this as a backup)
steam
OSX Server (maybe)
xcode
macdrive (I know it's for windows, but it's related)
Paragon NTFS

Additionally, I don't know whether to go for parrallels or VMWare, I kind of leaning towards VMWare because I've heard it has better linux support and I currently use VMWare (can I share VMs?).

I would use Movist over vlc but I think they didn't update Movist for a long time since I don't use my MBP for a long time.

If you want to run Linux in a vm on OS X I'd be considering Virtualbox or VMware primarily. As for other software I don't think I could function without Quicksilver,

Thanks, I looked at movist and it's now commercial on the app store by the looks of it but I'll still check it out (at least the older free version) and quicksilver.

How does pixelmator compare to e.g. gimp or photoshop?

Check out TextWrangler or Sublime Text.

TextMate or Sublime Text are both amazing if you want a gui editor.
