so i'm a total sucker for the gathering and crafting in MMOs, and am looking for one to play. I've played RIft, Tera, Guild Wars 2, FF 14 ARR and SWTOR

WoW.

SWG had the best crafting in the genre. Might be worth looking into SWGEmu

mm.. fun crafting? i don't know, i never liked crafting.

but decent MMO with play value.

Guild Wars 2.

Pros:
Free online! (it's buy 2 play)
No cash shop, it's not pay2win.
Skillbased game, not gear based.
new content every couple months (there's supposed to be new permanent content coming out soon)
3 game types to play from. 1. pve. 2. structured pvp. 3. Server vs Server vs Server war.
did i mention it's free online? no 15 dollars a month. buy the game once, and voila you play whenever.

cons:
No clear distinct endgame (people complain about this alot).
Not a heavy emphasis on variety of skills and weapon sets (more focused on traits and skillbuilding sets)

can't think what else.

but definitely give it a try. :D

Haha, yes, Dofus is still around. It's actually come a long, long, long ways in the past 10 years. It's Dofus 2.0 now with monthly expansions.
