It won't be out until next year, but the next one in line that I can think of is Code Vein. It's a Bandai Namco game that's essentially anime Dark Souls.

The jury's still out on it, but I think it looks decent so far. Probably won't be nearly as good as Nioh or Dark Souls though.

Hollow Knight and Dead Cells are metroidvania games. Not what you're looking for.

Salt and Sanctuary is what you want.

Salt and Sanctuary is a blast to play, it has the same feel throughout the game. It does get a little arcadey once you get used to some of the mechanics and wield the more hardcore weapons (like great scissors).

Hollow Knight isn't exactly a Souls clone but it does a good job capturing the atmosphere and storytelling of a Souls game while still having its own identity, and it's just a fantastic game in general.

Salt and Sanctuary is also pretty good
