I'd ideally put my OS and programs on it, with a secondary SSD being reserved for games and downloads.

Probably not worth the cost. Im building a mini itx case though so I can benefit from it in terms of space management.

I'm only planning on putting one game on it since its so small (space capacity), its used mainly for the OS.

sata m.2 still can hit 700MB/sec. You should do us all a favor and physically throw your brain into the trash.

My dream is to have a 1tb m2 SSD for the os programs and a 2tb sata SSD for games.......

who the hell is transferring more than 700MB/sec on a daily f***ing basis? are you insane?

Even still, sustained transfers are great and all, but random small (4k) reads/writes are where it's at.
