Primarily using it for gaming at 1440p/144hz. I'm upgrading from a i5-4670k.

Here I changed a few things.

Your monitor now has gsync, a better pay, and get a Windows pro key from eBay for $35.

If you want 144hz/144fps you need to ditch the i5 and get a 8700K, 8700K will give you way more frames. Get rid of the $90 W10 key and get a win7/8 key off an old pc/laptop and get it free. that i5 will bottleneck that 1080ti @ 144hz/144fps

Do not get a w7 or w8 key get a w10 pro key for $35 eBay sells them they are legit. I just built my new rig and applied the w10 pro key.

Any validity with the 8700k over the 8600k for gaming only? Only research I've done was some youtube videos that said that the i5 will outperform the i7 solely for gaming. Is this true?

And FYI - the only parts I am upgrading is CPU/RAM/Mobo. All other parts are in my current rig.

Depends on the i7 and the i5 some do things better then others. A 16 core i7 will suck at gaming but do better in a workstation where multi taking us needed.

Speaking strictly between the i5-8600k vs i7-8700k. About a $120 difference that I mainly plan on using for gaming. Does the i7-8700k really underperform the i5-8600k?

Your always better off with the newer tech over an old o e unless it's made bad or performs crappy.
