I don't think I can start a new offline game on a new file so I was wondering how online works.

I think the only way to start a new file is creating a new profile. If you play online with someone joining you, it's the same exact file, and it reverts to your AI partner when they leave the game. If you join a game in the middle of playing, you'll start where the other person is, and if you want to start where you left off you'll just have to select the chapter you were playing last. You always keep the same weapons, even when you start the game over again, so you don't have to worry about losing your save.
