I hear talk of stance changing for combat. Witcher I I don't remember much from but I was never shown how to change stances. If someone could let me in on it, I would really appreciate it.

Either what Keaze_ said, or you are talking about chaning Combat Styles..
As quoted from wikia :
"To select a combat style, left-click on desired icon to select the style, then again on your intended target. It is advisable to use the space bar to pause when switching combat styles. The final choice is of course your own."
There are three Combat Styles
1) Strong Style
2) Fast Style
3) Group Style

You can't change stance. The only "stance change" i can think about is during the stealth missions. Drawing out your sword will put you in attack stance, making your footsteps noisy. Sheating the sword will put you back in stealth mode, where you walk slower and footsteps make no sound.
